Everytime I see or think of a boss that uses plants I always think of Floral Fury from Cuphead which is an amazing boss theme.

Tree Drop Bop. I think yours would have a bit of soft drums for the first bit and soft guitar riffs. The drum produced by hitting a hollow tree which I think could be interesting. It then evolves into guitar riffs mainly for the rest of it.

I would imagine Nitroxus would be a starter boss/secret boss but with an unexpected banger theme.
I could also imagine high energy 8-bit music all around. An 8-bit electric guitar pauses it mid way to blend in with the rest of it.
