What sort of roles are open, is it just sort of a crew thing? or will there be specialized jobs and such as if they are trying to establish a colony?

The latter, there are places that can be open to professions such as fighting, baking, business, marketing, and such, as well as all normal ship jobs such as captain, quartermaster etc.
