What if, in MLP Canon, 'Purple' and Astral Veil was actually 'Green'? Would that make them better or worse?

It would make zero difference. Purple is just the closest color to the Void that 'Purple' originates from. It reminds 'her' of home, so it's her favorite color, so she based her physical form and name off it.
If the Id (the Void) was green-like, she /would/ be 'Green'.

There is no real power to the Id, it's just a universe like any other (though it's mid heat death, so there isn't really any standard matter left). The main difference is it's physical laws tie it to the rest of the multiverse in a relatively unique way.
